since BBQ time is approaching what is your favorite and how do you like to cook it, esp...BBQ...
I use a very very hot BBQ fire mesquite and juniper....hot and fast..
very rare for me...RIB EYE BONE IN, and med rare for the other half.
I will also do a brisket very slow on the BBQ like 6-9 hours..but it takes a lot baby sitting to keep the fire just right.
for grilling (high heat direct flame) I too love bone-in ribeye! Even for roasts in the oven, ribeye roasts can't be beat on the flavor/tenderness ratio. For guests though, i usually do chateaubriand, cut from the midsection of the tenderloin. I season it with a flavored butter & wrap it in bacon before searing it on the grill. Also here in Cali we do a lot of grilled tri-tip roasts. It's a bit tough & has to be cut on the bias against the grain but it's cheap & goes great with salsa, chimichurri, A1, hot sauces etc.
My friend has a smoker bbq & it's a treat to slow-cook brisket & pork shoulder when i've got the time (which unfortunately is quite rare nowdays).
I don't eat a lot of steak so if I'm going to indulge, I want a nice thick and tender filet.
Other than that, you just can't beat a good brisket that falls apart in your mouth.
1st one.....porterhouse not the t-bone...
2nd one...ribeye with rib bone...
3rd one...sirloin...
4th one....any other one you want to prepare for me.....
Porterhouse, NY Strip (without the "NY" in it), Chuck Eye Steak. Any other "steak" and I would rather let somebody else eat it. I wouldn't.
