At home I grill skirt steaks on the BBQ, any other cuts of steak we go out for. I don't want to spend alot of money for a steak only to find out I ruined it on the BBQ so we go out. Tellers Chop house, Mortons, Rothman's and 21 main have excellent rib eyes and filet mignon. Skirt steaks I have masterd on the grill, I serve them medium to medium rare and if you get a good cut it's like butter. I just season with salt and pepper and then grill them on a high flame for about 4 minutes a side. 2 years ago I made 4 lbs of skirt steak for a 4th of july party I was having, best I ever had.

Ribeye cooked rare, brought to temp in the oven then finished on the grill.

Oxtail is something I rediscovered a few years back and I cannot believe it is not more popular as it is so darn tasty and pretty good value too.
