I made a baked pasta with leftover cooked rigatoni and broccoli combined with some ground beef, onions, garlic, mushrooms, tomatoes, madeira, and topped with mozzarella.

The wife and I learned how to make empanadas about 2 months ago with a leftover pork shoulder.
It was really easy and we even learned how to fold over the edges to look nice with a little help from YouTube.
I just finished the last of them 2 days ago.
They keep well frozen and are a good quick meal.
Now I’m gonna have to make some more .
