Had defrosted a pork tenderloin and wanted something quick and yummy, so I went with an old standby ... pork with noodles, broccoli, and Thai sweet chili sauce.
Took about 13 minutes to make including about 6 minutes to boil the water for the noodles! Tomorrow I may have the same thing except with peanut sauce (which also goes great with pork).
A soft tortilla in a hard shell, or a hard shell in a soft filled with shrimp and chicken in a garlic lime sauce and various toppings. Drink: Glass of Turkey Hill iced tea.
We went out to a Spanish restaurant last night called Sangria 71. We had tapas which consisted grilled octopus, beef empanadas, and Ostras al Horno which is baked fresh oysters with melted manchego and spinach. For the main course I had grilled jumbo shrimp in a garlic sauce with a lobster tail and my husband had Paella negro which was a seafood Paella with saffron rice and black squid ink.
Pan seared chicken breast with tarragon cream sauce over bulghur, side of sliced tomatoes and yellow cucumber with balsamic glaze (TJs).
dessert for me: sugar free jello, cranberries, pineapple, mandarin oranges, apples and pecans with cool whip (everyone makes fun of me for liking this), and homemade banana bread for DH
