I was just introduced to Kimchi about two years ago. My friend served it with Korean BBQ beef.

It's one of those things that has to grow on you. Now, I don't want Korean BBQ without the Kimchi on the side!

Honestly though, I have always loved pickled, fermented, and sour stuff, so it wasn't too much of a stretch for me.

Second try with the Korean kimchi. Being a novice with the strong salty, sour taste, this time I cooked some of it into a dish rather than just eating it straight up as a side.

Took inspiration from these two recipes... I am using thin-sliced boneless center cut pork chops cut into small strips, frozen chopped spinach, minced garlic, scallions, dried ginger, kimchi, and ABC semi-sweet soy sauce. Trader Joe's Japanese fried rice as the side, along with a dollop of Thai Kitchen sweet chili relish. Came out nice :-).

I must "spread it around" so I can't rep you again, but your dinner is lovely. Did you like the kimchi better mixed in with the pork & other ingredients? I suspect if I ever try it, it will be to do something like you did!

=====

I had shredded beef mini-tacos on Mission Net Zero mini tortillas (plain and tomato basil) ...

I had FOUR of them (come on, they're MINI tacos! ) and they were very very yummy!!
