Beef ravioli with tomato sauce with sauteed mushrooms and onion plus green beans.
We planned to have roast turkey but it took too long thawing so that's tomorrow's dinner now (not having turkey on Thanksgiving so having it early).

Dessert was pecan pie bars, made for Thanksgiving but a few left over for current consumption.

Leftovers -- one thick breaded baked pork chop, some brown rice, the rest of the applesauce and a salad. We are cleaning out the refrigerator in anticipation of the big Thanksgiving meal.

Taking a little break between class prep ... just one day of classes for me this coming week (tomorrow) and then I'll be "officially" on Thanksgiving break for 6 days. Given how insane this semester has been, I am SO looking forward to it!

Anyway, I needed something easy today for dinner (which I ate around 2 p.m., having gotten up around 4 a.m.) -- and I'd recently bought a couple of Annie Chun noodle bowls to try. I decided on the pad Thai, but I knew I wanted to add lots more veggies to it and a little bit of shredded cooked chicken (literally, an ounce), so I chopped/diced carrots, onions, sweet bell peppers, zucchini, snow peas, and mushrooms and cooked them on the stovetop. Then I followed the simple directions on noodle bowl box, although it took 3 minutes to nuke in my underpowered microwave. I added the pad Thai sauce, some chopped peanuts, my cooked veggies (see picture #1 ... YUM ), and the chicken, tossed everything a few times, and ate (see picture #2 of my plate! ).

It was very good with my add-ons, especially the veggies (I'm not sure the chicken added much), and very filling. However, I was actually really surprised at how few veggies there were in the noodle bowl -- I think there were actually fewer than a dozen tiny freeze-dried veggie pieces! Isn't Annie Chun known for vegan food? Hence my surprise. Anyway, I was glad I'd added so many of my own.

Hannaford has several Annie Chun noodle bowls this week for $2.50 each, which is quite a bit lower than usual, so I might buy more just to try. (Of course, I could make my own noodle bowls much more cheaply, and I will ... after this semester! )

Now, back to class prep ... wishing everyone (who celebrates it) a happy Thanksgiving week!
