I was wondering, are there any issues with mixing different brands of pasta, as long as they are the same style of cut? We had a large surplus of pasta that several of our packages were open, so we put them together in a pasta container. The mix is American Beauty with at least three dollar store brands. We want to keep them fresh in the container and use them before we open another bag/box.

It's possible the cooking times could be different, so check that. We're at high altitude and have to add to the cooking time specified on the box. For instance, De Cecco brand takes a lot longer to cook than indicated on the box, as much as 5 mins longer, while Barilla takes from 0 to 1 min longer.

I have done fettuccine and spaghetti together for the same reason, using up partial boxes. No problem just check the cook time and put one in sooner than the other, such as the fettuccine two minutes before the spaghetti. Makes a more interesting presentation, too.

Absolutely no problems but the downside would be cooking time. The thicker the pasta the longer it takes to cook. If you do mix them and then cook them together you will have to cook them for the length of time the think pasta takes and the thinner will be a bit mushy. That being said most pastas do not vary a lot on how long they cook.

Cook them separately (times might vary) then mix to your likeness. Or read the cooking instructions - it might match.

(Add a hint of beet juice to make them pink )

I have the same issue. I stand there, looking at the boxes, trying to match up cooking times. LOL. I can have boxes with 5 different cooking times.

All brands have different cook times....put the longest cook time in first..and add the shorter cook times a bit later!

I find this to be the easiest. Even the same brand can have a longer cook time. Some boxes take longer than others. Probably due to humidity.

Great suggestions from posters, EXCEPT that the OP has already put the different brands together in one container ... so unless he can still tell them apart, he can't time them accurately now. Oops!

OP will get a nice range of texture, from al dente to undente.
