Last night I made baked chicken thighs using a simple rub of thyme, rosemary, oregano, paprika, onion powder, garlic powder, salt, and pepper. (It was based on this recipe: Crispy and Tender Baked Chicken Thighs Recipe - Allrecipes.com , but I didn't have onion salt or garlic salt so I used powder instead.) Here's how mine came out:



It was really excellent, and so simple! I have several leftover thighs so I expect I will have them again tonight. (I would have loved to roast some veggies with the chicken, but I am out of asparagus, onions, mushrooms, and carrots -- my favorites! I REALLY need to get to my grocery store!)

Oh, I had it with a slushy pomegranate/peach sour (that's becoming one of my favorite drinks!). I've gotten a few rep comments mentioning that drink specifically, so just FYI, here's the simple recipe: take 2 parts peach liqueur, 1 part whiskey, 2 parts pomegranate juice, and lots of ice, PLUS cut-up fresh fruit if you have it (I use sliced peaches when I have them), then mix in a blender and VOILA!, you have a very refreshing drink. (The first time I made it I used a pomegranate cocktail mixer but then realized that pomegranate juice was about 1/4 the price! I will probably try it with peach juice at some point.)

The pomegranate juice makes the drink really lovely!
