Tonight English cucumber,tomato,dill goulash with chicken breast pieces and basmati rice. To drink lassi. For dessert 1/2 a pink grapefruit.
Olive oil
1 large chopped onion
1 diced English cucumber
3 to 4 medium sized diced tomatoes
dry or fresh dill
salt/black pepper to taste
chicken breast pieces
Sauté onion,add cucumber dices. Cook for a few seconds,add dill,stir,add tomato dices,stir,add black pepper and finally add cubed chicken breast and cook til done. Salt to taste last. Serve with rice.( sometimes I add baby parsley/dill meatballs instead of chicken breast)
I was going to make corned beef and cabbage, with carrots and potatoes, but I have to go to Sams later, so I might finally succumb to the temptation of buying a bag of the frozen lobster they have now, and have that with potato salad.
I hope everyone had a wonderful Easter. Since we had ham yesterday, I told my guests to take the remainder home with them. I wanted lamb but my husband and guests all wanted ham for dinner.
Tonight, we're having a meal that I want: smothered lamb chops, mashed potatoes and gravy, spinach with bacon, red peppers and sliced hard-cooked eggs, and brownies for dessert.
