Had leftover thai salad for breakfast so today is Backwards Day. Will have steak for lunch and breakfast tonight! Homemade (by my chef son) Blueberry and maple sausages, omlette and maybe a few silver dollar pancakes.
Today I needed something simple and I had some bone-in chicken thighs that I needed to use up, so I went with an old favorite, lime garlic chicken with rice (a Betty Crocker recipe, if I remember correctly) ... very simple to make in a crock pot. Oh, and I had a new one of THOSE to try out, too -- my 20- or 30-year-old one has been my "everyday" crock pot because it's medium size, but it's so old the nonstick coating is just about gone AND it's the kind that only has heat on the bottom (which may explain why occasionally things STICK, even when I use nonstick spray and lots of liquids). So I bit the bullet and bought a new medium-size one (although it wasn't much of a bullet, since I got it for $20! ).
Anyway, here's how the food turned out ...
I've made this recipe at least a dozen times and it ALWAYS turns out well, but this time I decided to add a bit of broccoli to it (next time I'll add a LOT more, maybe some other veggies too) plus some chili flakes. It tasted great!
