Vegetables for me today. I cut up carrots, celery, bell peppers, broccoli & a cucumber to have with hummus. Also a bowl of berries topped with plain Greek yogurt & toasted almonds.
Well looks like we are in the same boat but your lunch sounds more inviting
Caprese salad with extra lettuce. Usually I'm not a big basil fan, but I was in whole foods yesterday and they had lovely fresh mozzarella, strategically placed next to these beautiful and tomatoes and fresh basil. So I made some version of light pesto sauce, mostly basil, parsley, vinegar and a handful of cashew. Layered lettuce, tri color tomatoes, cheese and sauce. Great lunch.
Another turkey sandwich on honey wheat with mayo and topped with the last of the piperade veggies.
