Tonight.....Boneless New York Strip Steaks (it's "Choice" grade...but so good looking, it might as well be "Prime")
I marinated them since 2 days ago in a Raspberry Vinaigrette Dressing.
It will be served with some Pink Shrimp on skewers (Wild, USA).
Even though we have a really bad thunderstorm going on right now, I will STILL put them on the grill (under a covered patio ), brush the shrimp skewers down with a mix of olive oil, pepper, VERY LITTLE salt (seafood has already enough sodium!), fresh garlic, parsley, paprika and fresh (chopped up) basil.
Served with crispy french fries, and some crisp, steamed veggies in a garlic herb seasoning (frozen steamer pack).
I anticipate my husband being home on time, since he knows, WHAT we are having for dinner....ROTFL!

1 1/2 lbs ground beef
2 cloves garlic, minced
2 Tablespoons veg oil (I used corn)
1/2 c flour
3 Tablespoons chili powder
1 1/2 tsp salt
1/4 tsp pepper
4 c water
12 corn tortillas
hot oil
1 1/2 c chopped onion
2 c shredded cheese
Preheat oven to 375. Brown beeef and garlic in the 2 Tablespoon oils. Stir in flour, chili powder, salt, pepper and water and bring to a boil. Turn down heat and simmer 15 min, stirring several times. Crisp tortillas in hot oil. Line the bottom of a casserole dish with 6 of the tortillas. Spread 1/2 meat mixture, 1/2 the onions and 1/2 the cheese on top. Place other 6 tortillas in casserole dish. Top with remaining meat mixture, onions and cheese. Bake 25 minutes, uncovered.
Serve with sour cream and salsa.

Hey, burdell, this week's the time to get real creative. See if you can maybe try an omelette. Get some grated cheese, maybe some diced ham.......
The french toast idea sounds terrific. I've done it homemade a few years ago. I miss doing that. Maybe I will do it again soon.
Regarding the omelette, just a suggestion for later in the week if you like.
This afternoon I will be roasting on the barbeque a huge pan of yellow onion and green peppers, another pan of broccoli and cauliflower, another pan of baby carrots and zucchini squash, and one last pan with fresh asparagus...each pan of veggies gets splashed with olive oil and salt and pepper. I roast the above uncovered with the lid of the barbeques closed and the temp around 450 until the aroma is overwhelming (30-40 minutes) and the veggies are tender. These get ladeled onto a large bed of steamed white rice with a variety of condiments on the side, orange sauce, hoisine sauce, scezchuan sauce, and a rather spirited dark sauce. I add an inch and a half pork chop I have cooked on the barbeque and add a large cold glass of Pacifico beer, and I'm good to go. MMMmmmmmm.
