We are pretty boring tonight having spaghetti, with a veggie and bread.

OMG! I do that all the time! I really stinks when you go to pull out the cereal in the morning and find the milk in the cupboard from yesterday lol.

Do you have a good recipe for meatloaf? I've never had it before but want to give it a try. I'm doing this new "ok i'm gonna cook" thing...but just want easy regular recipes...nothing fancy because I don't even get home till 6:30 and my kids (and husband) are very picky.

I have no clue - but that Japanese last night was delicious. I actually ate cabbage and zucchini, which is a huge step for me. LOL!

Tonight will probably be something simple - soup and sandwiches, maybe. It's a gym night (oh joy).

Nik-Meatloaf has to cook for about an hour-if using just ground beef.

Might be easier on you if you mix it the night before. I do about 2 lbs ground beef, dijon mustard-probably 2T, 1/3 c ketchup, dash or 2 or whostershire, salt/pepper, 2 beaten eggs, garlic powder, packet Lipton's onion soup mix, 1T horseradish, 1 c oatmeal (you can use bread crumbs, panko bread crumbs or a couple of slice of bread soaked in cold water and squeezed). Just mix it all, refrigerate.

When ready you can freeform into a loaf or use loaf pan. Bake 350 for 1 hr.

Thank you Lacey! I will try it! I've always heard terrible stories "ewww meatloaf" but it sounds pretty good to me with a little brown gravy, mashed tater, and some broccoli!
