Great suggestion! This would be a very low fat recipe, but so good. I will look up the recipe I use for roasted mussels (super easy) and post it later.
Got it!! Hubbie just now said he LOVES eggplant parmiagiano---nice to know after being married 20 years and never making it for him, huh? I haven't even tried it myself.

I do remember and I did put it in my recipe file--Yum. I just usually don't read all these recipes to my hubbie and I read this last one to my hubbie and asked if he liked eggplant parmesan and he replied he loves it!! So now I have 2 great recipes to try!!

Was going to make chicken fried steak last night but made stuffed manicotti instead...so tonight is the chicken fried steak, mashed potatoes and gravy
