Tonight is chicken. It basically boils down to chicken, pork, beef, fish or pasta. That's where I start feeling like what else can I make? I'm doing the recipe tonight I already know very well and that is chicken thighs baked. Yes, it's dull but I am not in the mood to do anything very imaginative tonight. Was considering making a peach cobbler--never made one before but decided not. Maybe tomorrow night---I only have canned peaches and don't know if they would be that good anyhow. I definitely need a change about now---sure hoping for some sun and maybe some BBQ soon.
cyn.....You have to try this Peach Cobbler recipe!!! You'll never want to eat traditional peach cobbler again, and it's SOOOO easy to make!!
1 large can sliced peaches, undrained
1 box butter pecan cake mix
2 sticks butter or margarine, melted
1/2 cup chopped pecans (optional)
In a 9 X 13 pan, dump can of peaches juice and all. Sprinkle the cake mix over the peaches. Drizzle the melted butter over the top. Sprinkle with chopped pecans. Bake at 350 for 60 minutes. Serve warm with vanilla ice cream.
I take it to every covered dish dinner and people beg for the recipe....I'm usually embarrassed to tell them how easy it is.....LOL

Well, gang, my latest version of "dinner" was best spent at lunch today. I went to Saltgrass this afternoon. I had prime rib, a baked potato, the freshest house salad with ranch dressing that you can get, and a few slices of Shiner Bock-baked bread.
Little late but made a roast beef on the rotisserie, mashed potatoes and spinch.
