had a nice salad and some leftover stew~ then went for a walk in my t-shirt cause the temps are in the low seventies! this weekend temps to be in the 80's

Had Shrimp Vera Cruz over brown rice tonight, and oh my, but it was good. I had had a version of Shrimp Vera Cruz that I really liked at a Mexican restaurant in La Crosse the last time we visited the boy, and the spouse tried for the seasoning balance in that one rather than the mix he usually uses. It was very, very good, probably about 90% of the way to duplicating the dish I had at the restaurant, and most of the difference between the two was in the texture of the sauce rather than the flavor balance. He usually uses jalapenos in his Vera Cruz sauce, but they had used roasted poblano peppers, which added a whole different dimension that we both really liked, and when I saw a bag of shrimp and a couple poblanos in the grocery cart this weekend, I knew what was in the works for the week. I am full and very, very content.

Well all was not lost with dinner...Dessert did come about...Chocolate pudding with real cream topping...First pudding in weeks made it all the better.

I had a teriyaki chicken salad. Haven't had any teriyaki in years, and my mom knows how to cook some teriyaki chicken. She showed me how to make some, and I put it to the test. Looked a little like this:

They had fresh cod fillets today at my local market. Breaded with Panko Italian style breadcrumbs, sauteed in EVOO and butter. Sides; Steamed broccoli, quartered potatoes seasoned with salt, pepper, fresh garlic, parsley, oregano and pecorino tossed all together with EVOO and baked at 425.
I made tons and have nothing left. They ate everything

I'm just about to go out for groceries so I popped in here for some ideas on what to cook for dinner as I just couldn't think of anything. Except now I'm confused as to what to pick - everything mentioned just on this page sounds delicious. Couple of mentions of shrimp, so I thought yes, okay, haven't had shrimp in a while, I'll go buy some of those. Then I see that yummy chicken salad, with that big in-my-face photo, and whoa! suddenly got a craving for that. Hmmm, might get both shrimp and chicken and make one tonight, and the other tonight.

I found this Caribbean Island Lime Shrimp recipe on the Net the other day and I'm dying to try it. It's got lime & orange juice, tequila, garlic, and spices and stuff.

I'll let you know how it turns out.

OH skbs sorry to hear of your mishap on top of the bad week you are having physically. Thankfully it was just a pan ruined.

amber my mouth is watering thinking of this big deli down in Indy. They put out the best corned beef sandwiches I have ever eaten in my life!

Our Italian meatloaf, creamed potatoes and beets were yummy.

well, I thought I was gonna do chicken soup, ended up being baked chicken with mashed potatoes and fresh steamed asparagus, I thought it turned out quite well!

So I made the low cal version of Chicken and noodles. It tasted good but for 350 calories a serving it wasn't enough food. This is not something for my diet. That was lunch so for dinner I had lettuce and feta in a ww pita and a cup of soup. DH had steak and 1/2 corn(100 calories). I would rather have a huge salad. Night all. Going to do some reading before bed.
