Last night I ended up making rib eye steaks, baked potatoes, sautéed mushrooms and spinach for the boys. DD was at work. I had a cup of turkey noodle soup and a slice of cheese cake!

All this talk about lamb is making me hungry. I may pick up some lamb shanks and cook in pressure cooker with red wine and beef stock.

KEY LIME PIE[/SIZE]
[SIZE=2]1 pie crust[/SIZE]
[SIZE=2]1 can of sweetened condensed milk[/SIZE]
[SIZE=2]1 8oz cool whip[/SIZE]
[SIZE=2]1/2 cup of lime juice[/SIZE]
[SIZE=2]Beat sweetened condensed milk then add 1/2 cup of lime juice. Beat it in som more then add cool whip and fold.[/SIZE]
[SIZE=2]regrigerate then serve[/SIZE]
[SIZE=2][/SIZE]

It's very easy, refreshing and not loaded with calories.
You can even substitue Strawberries or any other fruit.

I make an ambrosia with sugar free cool whip, strawberries and mashmellows.
Dont' much care for coconut or tropical fruits so I do my own thing.

All that talk about lamb has me salvating too.
And
I love cooking with wine. Lamb shanks sound yummy too.

Comfort day today, I think. The weather geeks mentioned snow starting around noon, but there was already a sugar-coating on all surfaces when we got up this morning. Edit: they're now calling for six to ten inches, ending right about the time rush hour begins tomorrow. Glad we got the frat rat back to his abode yesterday.

We've got cookies on the agenda today. There's a new recipe that I want to try out before deciding whether or not to take it to the cookie party this coming Saturday, and I also want to experiment with a nut-free version of a favorite cookie of ours, for the same purpose. A cold grey day when the wind is driving the snow into every crack and crevice outdoors is a good day to stay in a cozy warm house redolent with the scent of baking cookies.

More comfort food for dinner tonight, too: before we even got out of bed, the spouse announced his intent to make a huge turkey pot pie for supper. Sounds great to me.

Tonights plan is to get as far away from Turkey as possible. The turkey pies I made yesterday were great but I have had enough so the extra pies will be sent to my kids houses and we will be enjoying steak tonight with maybe baked potato and salad..

Tonight, I"m having left over pizza and my poor sick husband is going to have chicken broth, maybe I'll cube up a chicken breast to go in it for him. I woke up this morning to find that the evil white stuff is trying to take over the world.

We have flurries right now........kind of nice actually for this Sunday football day. Last night's dinner was chicken skillet nachos with chile con queso (bad girl). Lunch today will be pulled pork sammies with coleslaw, and I think dinner is going to be grilled chicken breasts marinated in Italian seasoning with pesto fettucini.

Morning all....DS made a tasty pot of Chili last night. Plenty left over for lunch today. Thinking of sauteed chunks of boneless chicken with fresh asparagus and chopped mushrooms covered in an Alfredo sauce for dinner tonight. (trying to keep it inline with the boys diet) (Arrozo for me!)Salad of course..............have a great day everyone!
