Here's one of my fave things to cook for dinner when I'm going low carb.
Warning: This may not be "atkins kosher" because I use Shake and Bake, but it's still a very low carb satifying meal...

I take a bag of Shake and Bake (original)
Add:
1 teaspoon garlic powder
1 teaspoon black pepper
1/2 cup bran

I use chicken legs and thighs with the skin removed, shake it up and bake for 45 minutes.
(You can also use chicken breast as well of course; check box for cooking time)

I serve it with a caeser salad without croutons and a vegetable, ususally broccoli or brussle spouts.

Very filling and very yummy!

A couple of my favorite side dishes are mushrooms stuffed with boursin cheese and baked in the oven for about 25 minutes and tomatoes sliced in a pan coated with olive oil, topped with goat cheese and italian herbs and warmed in the oven for about 5 minutes (just enough to melt the cheese slightly).

Most of the recipes on this site are low carb and look to be very good. Haven't tried any of them though. Paleo Diet Recipes | Home of delicious paleo recipes
