So, I downloaded a movie from graboid and got files that just don't play... like something else still needs done...

Anyhow, when I open the folder All I get is a bunch of par2 files. I downloaded quickpar and ran it through, but the thing still doesn't play.

What am I missing?

When you ran it it should've extracted files from the pars. Those files will either be directly playable or will be an image file that you have to burn to disc before playing.

par files are usually files to fix errors in segments of other files, I'm not sure if they can actually contain the file itself. For example in newsgroups large files are usually dropped so the uploader will upload numerous files segmented.

file.000
file.001
file.002

This can then be reassembled for a complete file however corruption and missing files are also common, enter the par file. These can reconstruct missing parts or fix errors.
