I have been enrolled in a graduate school program for the last 8 months and completed 2 terms before being dismissed from the university. If I am planning on applying to different graduate school programs do I have to include my transcripts from this program I attended? How can the new graduate school see that I have attended the university that I was dismissed from?
It can be discovered through the National Student Clearing House. You can also be discovered if you received any federal grants or loans while at the school you were dismissed from.
It's not easy to find anecdotal evidence, so it might be rare that schools find out. However, I wouldn't take the chance. Even if you finish your degree, it can be revoked. All of that money and effort gone down the drain.

Send the transcripts. Then, call and make certain that they have actually arrived. Better yet, order several copies for yourself so that you can keep them on hand for the inevitable day when one (or more) goes missing.
Does anyone have any experience in getting dismissed from a graduate school program for cheating and being able to get into another program? Also, if my transcript does not state 'dismissal' and only states 'end of education' I don't necessarily have to state why I ended my education at the institution? Is it possible to state that I discovered I wanted a change in profession?

Aw, you beat me to it.
But to add, I was once a liar and cheater a long time ago. And I can tell you (the OP) that I didn't get anywhere in life until I cut that crap out. You just keep telling yourself, "I only have to cheat this one last time", or "one more lie to get me out of this mess". It just ends up being a never-ending cycle.
Either step-up your game, or forfeit to better people.
To answer your question, they may not necessarily find out, but they can. Do some googling, and you'll find a story about a guy that lied on his application and forged a transcript to get into a college. He got away with it at first, but the school later found out when he tried to do it again at another college. At which point, they revoked his undergrad degree.
Four years of work down the gutter because of his lying.
