It's there, but a) it's quite thin and b) it's not par-baked like the bottom crust so it's not as crisp. It's more dough-y so its texture sort of "blends" with the melted cheese.

Here's a picture comparison of deep dish (left) vs. stuffed (right):

OK, I can see that thin layer of dough in the second photo. I've just never noticed that whenever I've had it. I'll be sure and look very carefully next time I order some.

Lou Malnati's seems to be winning the popularity contest here, but I think Pizzeria Due (and Uno, but Due is a little more charming) has a much better flavored crust and is all-around a better pizza. It's a real treat to go downtown and eat at Due, even though I have two Malnati's within a ten minute drive. Make sure you order when you walk in, so that the pizza is being cooked during your long wait for a table.

i tend to notice Lou's winning most polls too, but I'm still in the minority that likes a less greasy, "breadier" crust like you get at Giordanos..Lou's seems to have that "pan fried" crust taste that reminds me of the old pan pizzas at Pizza Hut (of much better quality obviously). To each his own I guess

I lean towards the breadier crust as well, if that's your preference try Bacino's, Chicago's and/or Art of Pizza, all are better than Giordano's IMO, especially since the bankruptcy (they seem to responded to it by raising prices and lowering quality).
