Are there any metra stations (with express trains) that have decent parking situations? Everytime I've found an express train, I research the city and then find out that parking at the metra station is a nightmare. Help!

It depends where in the metro area you are, and what you consider a nightmare parking situation. For someone that does not mind going into a garage, paying a daily fee, and walking a block or two, Arlington Heights has a decent amount of parking, and some good express trains. But, based on your frustration, I would guess that you live in the West Suburbs, where pretty much every station is a nightmare (multi-year wait lists for monthly). Have you checked Aurora?

I'm actually not in the area, yet. We will be relocating to Chicago (from San Francisco) in the next year for my husbands job. I'm a stay at home mom and we're trying to do our research.

We're fine with parking in a garage, paying a fee, etc. but from what I've read you can't even find spots there (at least on the west line). We're trying to keep his train commute under 40 minutes if possible.

It is street level, but Arlington Park is also pretty easy to find parking.

Spots can be had in La Grange, but you might have to wait some time for the lots in the best locations.

Live in the north half of Oak Park. Use the Galewood Metra. Always parking there. Usually free.

Spots just by the tracks are $1.50 daily and are filled in the early morning.
But you always have plenty of spaces in the garages on the both sides of tracks.
You can pay daily or you can purchase your monthly sticker for $30.00.
No waiting list for parking stickers.

Oak Park Avenue station on the CTA green line has either monthly parking or $8/day parking in a lovely parking garage. The garage is literally across the street from the tracks and the trip takes 20 minutes.
