I tried Vegan... lasted about 10 days. Felt pretty bad by the end of it, too, though it obviously works for some people. I decided that "semi-vegetarian" works best for me by cutting out red meat and cutting back on chicken, focusing more on fish, vegetables, etc. Everyone's different.

But I can see where she has no competition. There's quite a few Vegan places in Atlanta and they all do pretty well -being the only place in town there gives her a captive audience. Hopefully she'll offer quality and good choices, and she should do extremely well.

Being that there is little competition I would think they could do well.
