I've been a fan of the David Eddings series involving the main character of Garion. Because it's not as bloody or sexy as Game of Thrones, it wouldn't need to be on HBO or Showtime. I think it would be a good fit on one of the broadcast networks (ABC, CBS, NBC, FOX) for a summer series. They could do the first five books which has a definitive ending. If the ratings are worth it, they could do the next five books which continues the series to its ultimate conclusion. If interest is still good, they could do a back story season based upon the books Belgarath The Sorceror and Polgara The Sorcerous. His following series was ok but not sure it would work as well on tv or movie like the other series.
HBO or Showtime could do a short series based upon the novel Lady Chaterly' s Lover. The Sylvia Crystal movie seemed to be more soft core porn than a reflection of the novel.
Incident at Twenty-Mile, by Trevanian

As far as television series, I love period pieces. How about something set in the court of King John? Or how about a series that is essentially a biopic of Sir Richard Burton (The British explorer/linguist/ethnologist/etc.), in which each season is a story arc? A couple might follow him with the Sindh survey, another on his journey to Mecca, his explorations of Africa might comprise a couple seasons, and single seasons might cover his journey through America, his posting in South America, and his semi-retirement and death in Trieste, respectively.
As a sci fi fan, I would like to see Poul Anderson's Hunters of the Sky Cave as well as A Knight of Ghosts and Shadows done with respect as well as imagination.

I would love to see the Belgariad and the Mallorean series on television. I don't think they could do it justice with a movie, however. As for the following series (The Elenium), unfortunately Eddings was very formulaic in his writing. Not knocking the guy, because it worked, but if you've read one series you've pretty much read them all.
I'd also like to see Anne McCaffrey's Pern series in either film or television, as well as Katherine Kurtz's Deryni novels.
Also, I'd like to see Hollywood go back to making Westerns. There were a few movies made from Louis L'Amour's novels, but I'd like to see an entire series on the Sackett family. The Walking Drum, as well, would make a fantastic historical movie.
If you haven't heard of it, it's a graphic novel series written by Joe Hill (son of Stephen King). There was talk that it would become an HBO TV series a little while ago, but I think that may have slipped through. I'm still hoping it'll become a show one day. It was such a great series!
