I am handicapped (fused back and heart condition) and like to fish with our small 14' boat and motor.
I have been to Pleasant and Powell a couple of times but I find the length and steepness of the ramps hard to deal with walking wise for me.
Are there areas at either lake where the ramps are more shallow?
We have a 30' motorhome that we would be using to launch the boat with.
I have even thought of buying/carrying an electric/gas scooter to take me from the bottom of these ramps back up to the motorhome but I am afraid leaving it at the bottom of the ramp is not very secure and someone might steal it.
I would like to continue fishing/boating if I can.

Why don't you check out Bartlett Lake? Their ramps are wide, not too long and parking is close. It is much easier than Pleasant, can't speak for Powell. You can even hop on with another boater for the short ride up if the ramp is too steep.

Better yet, just go to Saguaro, Canyon or Apache. Very little or no walking to or from your boat. The lakes are full and the ramps are very short.

We did look at Bartlett. I assume they have an RV campground, I just did not see it.
Apache, wow, a bit of a drive too, the last time I was there was 1967 when I was stationed at Fort Huachuca, AZ.
Maybe exploring other lakes is a way to go.

Try canyon lake...the ramps aren't very steep and you can park close...they also have camping on the shore for the motorhome and you can beach the boat right in front of the camp area..
