Why not reserve an SUV and a mini-van. Then you can check the weather forecast before you leave and just cancel the SUV if the weather is going to be sunny. Unless you are getting a vehicle from priceline or hotwire, you wouldn't have to pay up front for the rental.

When my kids learned how to ski, they took a 1/2 day lesson and then skied with us for the other 1/2 of the day. Whole day lessons can get boring, especially for your athletic child. I think they progress faster skiing with a parent once they get some of the basics down from a 1/2 day lesson. Or do one full day and then ski together the 2nd day. I've noticed with the group lessons that they tend to go very slow because they try to keep the whole group together. So there's lots of standing around and waiting.

If you do a 1/2 day lesson and feel you or they/both need more, you can always sign up for another lesson on your 2nd day.

Have fun in Santa Fe! Try not to stress about the road up to the ski area. It's really not bad at all unless there's some whopper storm that day.
