2. Discussed the importance of using the timers for the prepped pizzas out on the speed racks.
3. No jewelry on the hands is allowed except for a plain wedding band. No bracelets allowed.
4. Always have at least one source of sanitizer mixed up and available for easy use/access.

  • Jewelry - Prohibition
    Observation: Employee observed wearing a bracelet on his left wrist while preparing food.
    Correction: Ensure employees are not wearing jewelry on their arms and hands while preparing food. This section does not apply to a plain ring such as a wedding band.
  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: No sanitizer was mixed up and available in the facility when the inspector arrived.
    Correction: Sanitizer should be mixed up a readily available whenever food handling is occuring. Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Time as a Public Health Control*
    Observation: Pizzas on the three speed racks for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time. None of the timers were in use. Per the PIC, pizzas are not to be held more than one hour.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.

  • Critical: Backflow Prevention Device, When Required* (corrected on site)
    Observation: Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the sink basin.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.
