1. Employee health policy shared with inspector. Very comprehensive.
2. Discussed how cooling chicken uncovered is encouraged. Covering with a lid or saran wrap during the cooling process slows down the cooling process.
3. Discussed how the dump carts are washed, rinsed, and sanitized. Carts are rolled over to the sink, sprayed down, washed, rinsed, and then sprayed down with sanitizer.

  • Food Storage - Clean and Dry Location
    Observation: Food stored on the floor or food stored less than 6" above the floor in the WIF.;Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • Backflow Prevention Device, Design Standard
    Observation: The backflow or backsiphonage prevention device installed on the mop sink is not identified as meeting standards set by the American Society of Sanitary Engineering. A hose with sprayer that is often left on is attached to the faucet connection. Leaving the line under constant pressure means the AVB device provides adequate protection to the water line.
    Correction: Provide the approved backflow or backsiphonage device for the specific application and type of device to prevent contamination of the drinking water system.
  • Refuse - Covering Receptacles
    Observation: Dumpster or outside refuse container was open or uncovered.
    Correction: Cover all waste containers when not in continuous use.
  • Refuse - Maintaining Refuse Areas and Enclosures
    Observation: Trash and litter were observed adjacent to the refuse container outside the facility.
    Correction: The refuse container storage area and grounds adjacent to the container are to be maintained clean and sanitary.
  • Hand Drying Provision
    Observation: No disposable towels were provided at the hand washing lavatory closest to the hand sink.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the hand sink (front) and mop faucet are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair.
