    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: Facility packaged chicken salad sandwich in the front open display cooler measured 49 degrees F
    Correction: the chicken salad sandwich was cold holding at improper temperatures.The sandwich product was held < 4 hours and removed.

    Observation: Single service containers were found stored on the floor, in the rear storage area.
    Correction: Store single service items in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.

    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

The facility is approved for food service operation and the Chesterfield Health permit was issued to the owner at this time. FDA Form 1B (Employee Health form) was discussed and issued to the owner at this time. A discussion concerning the possible use if time-in-lieu of temperature for the hot holding of the prepared pizzas offered for sale.

    Observation: There was no temperature measuring device located in the rear warewashing/prep Kenmore reach-in cooler/freezer.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
  • Plans - Facility Operating Plans
    Observation: Properly prepared plans and specifications not submitted for review and approval.
    Correction: Properly prepared plans and specification must be submitted before: 1. the construction of a food establishment, 2. the conversion of an existing structure for use as a food establishment, and 3. if the regulatory authority determines plans and specifications are necessary to ensure compliance when a remodeling of a food establishment or a change in the type of food establishment is proposed.
