Discussed the following with the MGR/CFM: Employee health policy, and ensuring all food contact surfaces are clean and sanitized. Note: facility was experiencing a slow-down in customer activity and were properly cleaning during the time of inspection.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (corrected on site)
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: storage shelving, wire racks in RIR, and bottom (inside) of several RIR's.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Equipment - Non-Food Contact Surfaces and Utensils
    Observation: Observed accumulation of grime on inner surface of the large ice machine in the rear of the facility.
    Correction: Clean all surfaces of the ice-machine at any time when contamination may have occurred, at least every 24 hours, or per manufacturer specifications.

    Observation: Observed accumulation of dust build-up on ceiling tiles and walls.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Manager claimed that he had transferred his ServeSafe certificate to Chesapeake. Permit issued.

    Observation: The commercially processed ready-to-eat (RTE) milk was not discarded by the ""consume by"" date. Observed 5 milk containers that had expired 3 days prior.
    Correction: Discard the food at this time and ensure all previously frozen prepared or commercially processed RTE foods are served, sold or discarded by the most recent ""consume by"" date marked on the food container. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: Sliced and diced tomatoes cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Store in deeper pans.
