Permit displayed. Certified food manager (CFM) present. Active managerial control observed. Facility organized and clean. Spoke with CFM regarding employee cold holding, door gaskets and frozen over condenser in the freezer.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Egg whites cold holding at improper temperatures of 64°F and was resting on top of a container of ice next to the grill in the kitchen
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Fully submerge food in ice for proper cold holding.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Sausage links and pork chops cold holding at improper temperatures of 52°F and 44°F respectively.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
    Observation: The handwash station at the ware washing area is being used for purposes other than washing hands. The sink was being used as a dumping station and to store dirty wiping cloths
    Correction: The handwash facility identified above is to be used for washing hands only

Opening inspection. All equipment is new. Lighting results measured in foot candles Pie area- 59/79, Wait station-30, Cook Line 63/ 72/73, Warewashing area-91, Back food prep- 70, Dish washing area- 28, WIR- 12, Storage area-102. Wash, rinse, and sanitize all equipment and tableware prior to use. Alarm installed on the dishwasher at the time of the inspection. Health Permit issued upon receipt of certificate of occupancy. Checklist provided by PIC. Projected opening October 6, 2015
