Observation: Loading dock receiving doors are open when nothing is coming in or going out. .
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces. Air curtains are working but they will not eliminate birds or other large vectors. Keep doors closed when receiving and discharging activities are not occurring.

Observation: Measuring cups were found wet after cleaning and sanitization. Cups and ladles were not rotated to allow water to drain before storing.
Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of moisture that may encourage microbial growth. Rotate all measuring cups and ladles to drain before storing.

Observation: Single service items observed unprotected from contamination. Open boxes stored under open ceiling.
Correction: Store single service items in its original protective packaging . Open boxes must be stored under a cleanable ceiling.

- Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing*
Observation: Due to improper operation of the mechanical warewashing machine, equipment food-contact surfaces and utensils are not sanitized after cleaning. (See 12 VAC 5-421-1680)
Correction: Repair the unit so that achieving a utensil surface temperature of 160°F can be measured by an irreversible registering temperature indicator (e.g. thermolabel and maximum registering thermometer). Discontinue use of mechanical warewashing machine and convert to use of 3-vat sink wash, rinse and chemical sanitization. Use single-service items as deemed necessary if not capable of effective manual washing, rinsing, and sanitization of food-contact surfaces. Correction began during inspection.

Observation: Single-service or single-use items found stored in hall way off loading dock under unshielded waste lines..
Correction: Discontinue storage of single service and food support supplies in a location subject to contamination. When storing in ware house storage areas, exposed waste lines must be shielded or keep single service storage out from under the lines. Correct in one day.

Observation: Ceiling panels missing in dry storage above foods.
Correction: Re-install cleanable ceiling panels. Correct in 3 days.
