    Observation: The ready-to-eat (RTE) commercially processed sour cream in the refrigeration unit at the country kitchen was not properly dated for disposition after opening. One container of sour cream was dated for 2-16-16.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Sour cream was voluntarily discarded during the inspection.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the sink in the country kitchen appear to be leaking.
    Correction: Plumbing systems and components shall be maintained in good repair. Please correct within 10 days and provide invoice, or other written evidence of plumbing correction to the Montgomery Health Department.

-Handsink water temperature measured at 76F. Must be at least 110F.
-Hot water must be available at all sinks.
- Ammonia test strips must be available.
- Walk-in freezer and cooler door flaps must be trimmed to they don't interfere with door closure.
-Insulate the refrigerant lines to the walk-in freezer and cooler to prevent condensation on food.
-Delivery entrance is incomplete.
-Dumpster are must be completed.
-Thermometers must be available in all coolers.
- Ice machine not connected at the country kitchen.
-Handwash signs must be present at all handsinks.
-Slashguards should be placed on dump and handwash sinks at the country kitchen.
-Please provide a copy of pest control agreement.
-Please provide copies of food safety certification for all applicable employees.
