Observation: Interior of the dishmachine observed with accumulations of calcium, clogging the washing armature and possibly the sanitizer dispenser. Food spill observed under the 1-compartment sink in the cabinet area.
Correction: Clean the dishmachine and under sink area to a clean state of functionality.

Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
- Cooling, Heating, and Holding Capacities
Observation: Small coolers in the infant room, purple room, and blue room were not sufficient in capacity to meet the food storage demands of the establishment.
Correction: Provide additional cooler storage necessary to maintain food items at 41 degrees or below in the rooms. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.
