    Observation: There was no temperature measuring device located in the W.I.C..
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Observation: W.I.C. was observed running high but not out of temperature.
    Correction: Repair the W.I.C. to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the W.I.C., replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Generally, facility observed to be clean and well ordered. Quaternary ammonia from auto dispenser at 3-compartment sink at proper concentration of 200ppm. Staff knowledgeable about employee health policy. Operator to post health dept. permit in facility.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Portioned chicken and beef cold holding at improper temperatures in Walk in cooler and at sandwich prep area. Person in charge needs to monitor food temperatures regularly to ensure this proper temperature is maintained and product is cooled within 4 hours when portioned. Corrected by placing in shallow pan and placing in walk in freezer.
    Correction: Relocate food to an area refrigeration unit that is capable of maintaining food storage at 41°F or below. Monitor these temperatures regularly.
