Discussed the need to maintain shellstock tags for 90 days after the last item is sold and employee health. The Health Department will follow up in about ten days to check on long term corrective actions.
  • Critical: Employee Health* (corrected on site)
    Observation: Employees or applicants are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food, including the date of onset of jaundice or of an illness due to Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus
    Correction: The Health Department reviewed information about employee health and activities if they are diagnosed with or had a past illness from Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus. The Health Department will provide reference materials for posting within the facility. The operator should review employee health policies and responsibilities with employees on a regular basis.
  • Critical: Shellfish - Shellstock - Maintaining Identification*
    Observation: The tags for the shellstock (mussels and oysters) were discarded immediately after the container is empty.
    Correction: Maintain the identity of the source of shellstock that are sold or served by retaining the shellstock tags or labels for 90 calendar days from the date the container is emptied.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition*
    Observation: The prepared ready-to-eat (RTE) was not discarded by within seven days of preparation - Mother's Sauce (tomato-based with herbs) and anchovies.
    Correction: The kitchen manager voluntarily discarded the food. Ensure prepared or commercially processed RTE foods are served, sold or discarded by seven days after prepaation. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Critical: Food - Consumption of Raw or Undercooked Animal Foods
    Observation: The identification of raw and/or undercooked foods offered on the the menu, menu board, table tent or brochure are not identified.
    Correction: The Consumer Advisory shall include a disclosure statement that includes a description of the animal-derived foods and identification of the animal-derived foods by astericking (*) them to a footnote that states that the items are served raw or undercooked, or contain raw or undercooked ingredients.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Equipment - Food Contact Surfaces and Utensils (corrected on site)
    Observation: Equipment food contact surfaces/utensils were not observed cleaned between working with raw foods and ready-to-eat foods. The frozen ice stirrer was observed on top of frozen meats in the chest freezer.
    Correction: The stirrer was cleaned and sanitizer and will be stored in a clean foodgrade bag in the freezer to prevent cross contamination.
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing lavatories in the two bar areas.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Hand Drying Provision
    Observation: No disposable towels were provided at the hand washing lavatories in the dishwashing area and both bars.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

The atmosphere at Fellini's is great but here are a few things anybody considering dining at this restaurant should be aware of. The kitchen staff does not use sanitizer water to disinfect their work area after working with raw meats. Absolutely no regards for cross contamination or proper food handling procedures. I used to dine there before I was hired to work inside the kitchen and witnessed some of the most disgusting things you could possibly imagine. If you care about your health and wellness I would not recommend dining at Fellini's.
