Don't forget to datemark marscapone cheese upon opening. Fish can only be vacuum sealed when it is frozen before, during and after sealing. This is due to the possibility of botulism. Upon thawing the bag must be cut open. Permit can be issued.

    Observation: Preparation of raw food conducted in a manner that may cause cross contamination of ready-to-eat food (RTE). Raw eggs stored above butter.
    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food. Butter was moved.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Loose panel on front of frymaster. Disposal is not working.
    Correction: Secure. Repair disposal.

    Observation: Holes in wall by handsink.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Make wall smooth and cleanable.

    Observation: Floor drain by ice machine is dirty. Fan grills in walk in are dusty. Wall by trash can and handsink in dishroom is dirty. Mildewed caulking along wall of dishroom

    Observation: Worker is drinking from an open container in the dish room
    Correction: Employees may drink from a closed beverage container with straw if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration. (0 ppm)
    Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations. Sink was dumped and redone.

    Observation: Final rinse temperature was 199 F.
    Correction: Maximum final rinse is 194 F. Monitor unit, have serviced if necessary.

    Observation: Slicer found soiled.
    Correction: Clean and sanitize.

    Observation: Gaskets on prep unit are dirty. Drain pipe from ice machine has slime flowing from it.
    Correction: Clean.
