New procedure for tenders. They are breaded and partially cooked and then placed into walk in. This allows for easier final cooking in case of missing persons on duty. Some new equipment on line. However, many pieces of equipment are broken (microwave, two henny pennys) Two fryers were just repaired today. Walk ins are very organized. Back storage is organized. Good control of temperatures in spite of dealing with equipment that doesn't work. New sandwich line is proposed. Clean fryer wheels and wall behind fryers.

Mop sink drain lines were redone. Bottom of mop sink has rough concrete but tiles are expected to be the final surface. Kitchen sanitation has improved. Pack line has not been installed yet. Some of the equipment has begun to arrive. Permit issued.

A new manager took over store about a week ago. Improvements noted. I was informed that pack line will be renovated. If no change in sink locations, no plan review is necessary. Protect filter powder while in storeroom and keep box of tea bags protected. Call me when tiles have been repaired for a reinspection. Employee health policy is posted.

    Observation: Drain tube from drink station near drive thru is soiled. Inside fryer cabinets have grease accumulation.
    Correction: Maintain nonfood-contact surfaces of equipment clean. You may need to replace tubing.
  • Plumbing System Maintained in Good Repair
    Observation: Drain from holding cabinet is draining onto floor.
    Correction: Condensate shall not run onto floor. Direct drainage to a nearby floor drain.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Floor tiles under fryers and cove tile throughout kitchen are broken/missing. Lip to mop sink has broken tile. PVC chase by walk in is open and unprotected.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Provide a cap for PVC pipe opening.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Water pooling under shelves, fryers, and drive thru area.
    Correction: Clean these areas.

Floor drains need thorough cleaning. Some tile missing in kitchen and mop sinks. Wall by back handsink is in poor repair. Wire baskets to be detailed. Food particles found on some. PIC stated restaurant will be updating dining room and tile/wall work done in kitchen.

    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Observed spray chemical container stored on wire shelf in a manner that could allow contamination of food containers.
