    Observation: The employee is drinking from an uncovered container with no straw in the food preparation area.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.
  • Food Storage - Clean and Dry Location
    Observation: Food stored on the floor or food stored less than 6" above the floor.;Elevate food storage onto approved shelving with minimum 6" legs or casters.

    Observation: The meatsauce was not reheated to a sufficient temperature and time to eliminate pathogenic bacteria.
    Correction: Ensure potentially hazardous foods that are cooked, cooled, and reheated for hot holding are reheated so that all parts of the food reach 165°F or above for 15 seconds. Food shall be reheated within 2 hours.

    Observation: There was no temperature measuring device located in the W.I.C..
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Observation: The cutting board(s) along the prep top are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 165ºF for a stationary rack single temperature machine. The thermometer read 140 degrees F. Person in charge agreed to use the three compartment sink until the dishwasher was repaired. Person in charge will send inspector the invoice for the dishwasher repair.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

    Observation: The nonfood contact surface of the knife holder and condensate in the reach in freezer has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Gap at the bottom of the bottom of the back door.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

    Observation: Food is subject to environmental sources of contamination during preparation. Floor needs to be stored in a container with lid or in a way that will protect the floor from contamination.
    Correction: Protect unpackaged food from environmental sources of contamination during preparation.

    Observation: Marinera sauce hot holding at improper temperatures. Four less than 2 hours.
    Correction: Marinera sauce was heated then taken off heat and not hot held. Marinera sauce was then put into W.I.C. to cool down to correct temperatures to cold hold.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

    Observation: The cutting board(s) along the salad prep top are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.

    Observation: Chlorine sanitizing solution used was not at an acceptable temperature. Chlorine sanitizer was at 200 ppm.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 8 or less and the water temperature is 75°F. Manager agreed to use three compartment sink until chlorine sanitizer in dishwasher is at acceptable levels. Manager will send inspector invoice from dishwasher maintenance.

    Observation: Food contact surfaces of the slicer used to prepare/store potentially hazardous food items were observed soiled with accumulations of food residues.

    Observation: Feta, tomatoes, ham in small prep top, turkey in prep top in back and garlic and oil, fetta cheese in the salad bar in back sitting on counter cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Food was out of temperature less than four hour, it was relocated to a refrigerator unit that is capable of maintaining a temperature less than 41 degrees. Manager agreed to keep food temperature logs for the next week.

    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit. Observed package of ground beef stored over storage containers of mushrooms and other ready to eat foods in the glass front refrigerator,
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
