Proper hand washing and glove use observed. Staff observed taking temperatures of food. Discussed with PIC monitoring QT sanitizer concentrations in the 3 bay sink, and staff drinking from containers with a lid and straw. Facility is clean and orderly.

    Observation: A kitchen worker was observed drinking from a covered container in the food preparation area and then handling the container by the rim of the cup.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.

  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: The water temperature in the high temperature ware wash machine was below the minimum allowable (surface temperature) level of 160ºF. The thermometer and tape read < 160ºF.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
