Keep up with pest control to eliminate presence of pests, and make sure to clean up dead pests in kitchen area when found. Fans in walk in refrigerator need to be cleaned as to prevent dust and debris spreading on food held within.

Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized. Need to have temp gauge repaired. Use 3-compartment sink until corrected.
