    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 8 or less and the water temperature is 75°F.

Reminder must wash-rinse and sanitize all utensils and equipment. Blenders, knives and cutting boards are to be w-r-s every 4 hours or sooner during periods of inactivity. Have Certified Food Handlers Fax or email their certificates to Health Dept.

    Observation: There is no data plate on the warewashing machine.
    Correction: Provide a data plate for the warewashing machine that lists the machine's design and operating specifications. Install the data plate on dishmachine prior to using machine.

    Observation: A direct connection exists between the drain line of the sanitizing basin of the 3-vat sink and the sewer line.
    Correction: Eliminate the direct connection between the sewer line and the cited equipment. To be corrected within 30 days.

    Observation: The indoor ceiling material located at kitchen and dish washing area does not meet the standard of: 1. smooth, durable and easily cleanable 2. nonabsorbent
    Correction: Refinish or replace the indoor ceiling at the area designated so it is: 1. smooth, durable and easily cleanable 2. nonabsorbent. To be replaced with an approved product within one year.

Corrections needed. Permit was not issued. #1 Sanitizer and test kit for 3 compartment sink. #2 Handwash signage needed at hand sink. #3 Data plate is not visible on the dishmachine. Relocate or expose the plate. #4 Dish detergent Alarm is needed on the dish machine. #5 All single service must be 6 inches up off of floor. #6 Indirect waste drain was not installed under the 3 compartment sink, to be corrected within 30 days of opening. Ceiling panels in kitchen are not easy cleanable. Replacement schedule to be worked out.
