This facility was found to be very clean throughout, both food-contact and non-food contact surfaces. Excellent management of this facility. The warewash machine is now working properly, and sneeze shields have been added over all self-serve foods.
Person in Charge Observation: An individual not essential to the operation of the kitchen was observed entering the kitchen area for food.
Correction: Persons unnecessary to the food establishment operation are not allowed in the food preparation, food storage, or warewashing areas.
Physical Facilities - Cleaning Frequency and Restrictions Observation: The backsplash area along the ware wash line was observed with a build-up of black mold.
Correction: The physical facilities shall be cleaned as often as necessary to maintain cleanliness.

Food Display Observation: The salad bar foods were not protected by a sneeze shield, and a tub of ice was observed on the serving line with no sneeze shield, and the scoop handle lying in the ice.
Correction: Sneeze shields have been ordered. The ice will be pre-dispensed in cups and placed under a sneeze shield.

The management in this facility does a commendable job and is very conscious of food safety. Kudos!
Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* Observation: Warewash machine is not reaching minimum wash and rinse cycles. During heavy demand periods the wash cycle obtained a maximum temperature of 145°F. (Required minimum wash temperature is 160°F). During period of low demand the wash cycle temperature obtained a maximum temperature of 155°F.
During period of heavy demand the maximum rinse cycle temperature was observed at 145°F. (The minimum rinse cycle required is 180°F). During period of low demand the rinse temperature was observed at 190°F. Management may want to consider changing to a chemical sanitizing process or a dedicated water heater for the machine. Confer with Hobart.
Correction: Immediate corrective action: Establishment will make efforts to slow wash/ rinse process to allow machine time to re-heat.
