Observation: Mops not hung up to air dry.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Put tomatoes in container with ice surrounding to level of food, to maintain food temperature.
- Refuse Outside Receptacles
Observation: The refuse container located outside the establishment is filled so that lids not able to close.
Correction: Need to have garbage removed at frequency to allow for dumpster lids to be kept closed.
- Refuse - Using Drain Plugs
Observation: The refuse container used to store refuse/recyclables has no drain plug ( 1 of 2 )
Correction: Replace the drain plug to the refuse container.

Suggest use ice water vs just ice for keep cut tomatoes cold, at heated sandwich prep. area. QUATS sanitizer at 3-compartment sink = 200 ppm - ok Strongly suggest use metal pans for foods that are potentially hazardous - metal transfers cold much more efficiently than plastic.
- Temperature Measuring Devices
Observation: There was no temperature measuring device located in the ice cream freezer.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
- Refuse - Covering Receptacles
Observation: Dumpster or outside refuse container was open or uncovered.
Correction: Cover all waste containers when not in continuous use. Suggest get more frequent removal of dumpster.
- Outer Openings - Protected
Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Threshold is missing from door to exterior walk-in
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
