Manager and workers seemed knowledgeable about food safety. Observed proper hand washing. Keep up the good work.
  • Ice Used as Exterior Coolant - Prohibited as Ingredient (corrected on site)
    Observation: Ice used as a medium for cold holding the exterior surfaces of juice in a jug is also for drink ice.
    Correction: Cease use of ice used as a cooling medium for food. Ice that has been in contact with unsanitized surfaces may contain pathogens and other contaminants.
  • Equipment - Cutting Surfaces
    Observation: The red cutting board by the meat fridge is heavily scratched. The cutting boards along the make table are getting heavily scratched. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized. Please correct within 30 days.
  • Physical Facilities in Good Repair
    Observation: Light fixture in dishwashing area is broken.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Please replace within 30 days.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Air vent in the dishwashing area noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner. When developnig a cleaning schedule, be sure to include under equipment and in the edges where the floors meet the walls. Please correct within 30 days.

Solid bands are the only type of jewelry that a food service worker may wear. Manager suspects the ring ended up in the food because of the high volume of customers on 10/13/2013. During complaint inspection, observed a food service employee handling a ready to eat food with their bare hands.
