Getting the food temp thermometer during spring break. Glass ordered from Japan.
  • Temperature - Food Temperature Measuring Devices - Provided (repeated violation)
    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify holding temperatures in cold and hot held food.
    Correction: A Food Inicator Thermometer is required to take the temperatures of RTE and TCS foods multiple times a day to verify the temperater controls used in the day-to-day running of the resturant within 30 days.

Separate and identify personal foods from restaurant foods. Wash/rinse/sanitize cutting board and knife used for preparing sushi every four hours.
  • Cloths - Wiping Cloths - Use Limitation (corrected on site) (repeated violation)
    Observation: Wiping cloths improperly stored between use. Wiping cloth used for the cutting board used to roll and cut sushi is not stored in a sanitizer solution between uses.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Food Storage - Prohibited Areas
    Observation: Food stored under other sources of contamination. Personal foods(raw eggs) stored above restaurant foods.
    Correction: Relocate food storage to an approved area until the source of contamination is eliminated or removed. Correct immediately.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the under counter cooler.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature. Correct in 7 days.
