Annual permit expires 1/31/15. Follow up inspection in <10 days to assess compliance. Cooling practices, glove use, refrigerator temperatures.

    Observation: Observed bare hand contact with celery, tortillas, bread.

    Observation: Found chicken in marinade in 2 door refrigerator at 45 degrees.
    Correction: TCS foods must be 41 degrees or less.

04/01/2015Follow-up
Data logger results show that unit is staying above 41°F. The coldest temperature recorded over the past 5 days is 42°F and the warmest is 51°F. Temperature chart was left with the PIC. PIC agreed to keep all TCS foods in other refrigeration units until this unit has been repaired and found to be capable of holding food <42°F.

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: TCS food in bottom part of prep cooler >42°F. Humus and Sauce were 45°F and 44.5°F.
    Correction: TCS food for cold holding must be held at 41°F or below to inhibit the growth of harmful bacteria. The unit may have just come out of a defrost cycle as the air temperature decreased to <42°F by the end of the inspection without any adjustment to the temperature setting. A data logger was placed in the unit and will measure temps every 5 minutes for the next 1-5 days. PIC agreed to discard TCS foods that may have been >41°F for more than 6 hours and will check temps with a food thermometer to make sure storage temps are safe.

    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
