    Observation: Observed in disrepair: gaskets damaged on McCall dessert cooler, far right beer chest at main bar is full of standing water.

    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

    Observation: Observed in disrepair: some areas of worn floor grout (especially in walk in cooler), some areas of damaged or missing base cove tile, some stained or peeling ceiling tiles.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

I observed 2 servers with their hair down that repeatedly touched their hair. Their hair should be restrained to eliminate the need to touch it while working and to prevent it from getting into the food when they working.
General cleanliness of the facility is very good - keep up the good work!
Observed very good handwash practices by cooks and prep workers!
Mussels - ME 352SS, PE4213SS.

  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: Employee drank from cup with a lid but no straw in work area. Employee lifted the cover on the cup, drank, then put the lid back on. This can lead to contamination of the hands by contacting the surface your mouth was on.
    Correction: Employee removed cup from kitchen. If employees are allowed to have drinks while working, the drinks must be in a covered cup with a straw and handled in a manner that prevents contamination of hands, food, surfaces, wares, etc.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: TCS food >41°F in ice bath in top part of prep cooler. Brie 46, cooked potatoes 50, egg 45, cheese 52°F.
    Correction: PIC placed these foods on a 6 hour time control. The foods had been placed into the iced unit at 11AM and will be discarded if not served by 5PM. The service tech is due here later today. Continue to use time control for TCS foods held in this unit until you verify that holding temps are <42°F.

Refrigeration equipment repairs have been completed. Temps OK - Sausage in one prep unit was overstocked in portion bags resulting in a high (43°F) reading. PIC will address this issue with employees.

01/07/2015Follow-up
Printed and left data logger results with PIC for service tech. Tech is due here in about 30 minutes. Data logger shows temps >41°F. Drawer unit is not being used for food storage.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (repeated violation)
    Observation: TCS food in Prep unit 3 and grill drawers >41°F.
    Correction: Discard TCS food held in these units more than 6 hours and ensure that TCS foods are held at 41°F or below to inhibit the growth of harmful bacteria. PIC adjusted the temp in these units and will contact the service tech to check the units. Data logger left in the drawer unit until tomorrow. PIC agreed to discard TCS food in the unit that is >41°F at 2 PM today.
12/31/2014Follow-up
Backflow device has been removed from faucet under dishmachine rinse sink - a hose with a pressurized nozzle is attached to the faucet and is not protected from backflow by an air gap. You must install a backflow device approved for use with a pressurized hose (WATTS 9D? or equivalent).
Mussel tags OK - DC52SS, PE 2342SS Make sure employees ALWAYS date tags when last mussel of batch is served.
General sanitation has IMPROVED! Need to replace cutting boards that can no longer be cleaned. Keep up the good work!

    Correction: Cook finished cooking to 145°F.

    Observation: TCS foods in left prep unit were >41°F. TCS foods in 2 of the drawers in lowboy unit were >41°F.
    Correction: PIC discarded TCS foods in the units and called service technician. Data logger was placed in left prep unit for 2 hours - it showed temp came down to 37°F and held between 41 and 37°F. Gaskets are damaged on the 2 drawers that had food with elevated temps.

    Observation: Backflow or backsiphonage prevention device not available on threaded faucet as required by law. A hose under pressure was attached to the faucet under the rinse sink in the dishwash area.
    Correction: Provide a backflow or backsiphonage prevention device designed for use under constant pressure on this faucets. PIC removed hose from faucet.

    Observation: Toilet room door on employee rest room that opens into kitchen is not provided with a self-closing door
    Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
