  • Nonfood Contact Surfaces (corrected on site) (repeated violation)
    Observation: Inverted plastic bulk soft drink storage crates are being used as a substitute for a smooth, easily cleanable proper "dish rack," at the three compartment (dishwashing) sink. These crates are not easily cleanable at the bacterial level.
    Correction: We do not allow the use of bulk soft drink crates (or milk crates) as a substitute for a proper "dish rack" for draining, and air drying utensils and other food contact equipment. Find. or purchase, a proper smooth, easily dish rack for this application.
  • Handwashing Aids and Devices - Use Restrictions
    Observation: There were no paper towels at the handwashing sink in the employee restroom.
    Correction: We require that there be hand towels for drying the hands at all handwashing sinks. This violation was immediately corrected by the establishment management.

    Correction: We do not allow soft drink storage crates (or milk crates) to be used as a substitute for smooth, easily cleanable "dish racks," or smooth, easily cleanable shelving-because these crates have rough surfaces. They are not cleanable at the bacterial level. Replace using a proper "dish rack.

  • Critical: Toxics - Storage of Toxic Containers* (corrected on site)
    Observation: There was a spray bottle of purple cleaner being stored on a shelf above pizza pans.
    Correction: Cleaners, and sanitizers must always be stored below, and well segregated from, all foods and food contact surfaces. This violation was immediately corrected by the establishment management.

  • Handwashing Signage/Handwashing Facilities
    Observation: There was no sign at the back kitchen handwashing sink saying "employees must wash hands.
    Correction: We require that there be sign at every handwashing sink saying something to the effect of employees must wash hands. We need to do everything possible to encourage frequent, and whenever necessary, handwashing. The missing signage needs to be put back in place.
