    Observation: Observed an employee rub his face then put on gloves.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Observed an employee eating.
    Correction: No eating in the kitchen.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (repeated violation)
    Observation: Observed the mild salsa at 51°F in the refrigerator on the serving line. Also, leftover meats for donation were 45-46°F in the walk-in cooler.
    Correction: Product should be 41° F of less.
  • Cooling, Heating, and Holding Capacities (repeated violation)
    Observation: Observed the walk-in cooler at 46°F, the raw meat and vegetable refrigerator not plugged in, the refrigerator along the wall not operating properly (thermometer broken) pans stacked too high for proper circulation and the refrigerator for the cold items on the serving line at 51°F.
    Correction: Refrigeration must be fixed immediately.
